Pork fillet also known as pork tenderloin. This is the least used muscle in the animal and as the name surgests it is very tender. With little to no fat content it is well suited to fast cooking but try avoid over cooking. . all our pork is hung on the bone for at least a week allowing it to develop maximum flavour and ensure maximum tenderness!
